Countdown On!



With just a few weeks left until we depart to Italy, it's time to start preparing for the trip!  Chris and I have both been so busy with work I think we both kind of forgot we had this amazing vacation planned.  But as the weeks go by I am starting to get in serious Italy mode.  I got my books and started reading up on everything Italy.  Our destinations:  Rome, Florence(pictured above) and Pisa, and Capri, the true Italian experience according to a well traveled friend of mine.


I got inspired and decided to whip up some Italian for us!

Pork Chops with Sage (serves 2)
Adapted from Skinny Italian
2 eight oz. center cut pork loin chops, on the bone
1/2 tbsp extra virgin olive oil
1/4 tsp salt
1/2 tsp dried sage
1/4 tsp fresh ground pepper
1/2 cup of tomato sauce

Heat oil in skillet over medium heat.  Rub in salt, pepper, and sage into the pork on both sides.  Add to skillet and cook turning over once until browned.  About 5-10 minutes.  Add tomato sauce and bring to simmer.  Reduce heat, cover and simmer until pork is opaque when pierced near bone.
I served with pan grilled zucchini seasoned with salt and pepper.  Oh and some vino of course!
