Amazing Hummus



My first homemade hummus turned out pretty darn good!  I think I could eat a mediterranean plate for dinner every night.  Great served with veggies, pita, kalamata olives.

Hummus
Oh She Glows
2 c. cooked chickpeas with liquid set aside
2 garlic cloves
1/3 c. tahini
8 tbsp lemon juice
1 tsp sea salt, to taste
2 tbsp chickpea liquid
4 drops of tabasco, to taste
olive oil to drizzle
paprika for garnish

Combine all in food processor.  Drizzle with olive oil and sprinkle with paprika.  Enjoy!

Malibu Wines


Its Saturday morning.  What should we do today?  Ikea browsing?  Or.... wine tasting?  Wine tasting it is!  Just 30 minutes up the coast from LA, and into the mountains, theres sits Malibu Wines.  They offer wine tasting flights with selections from Saddlerock (grown on the grounds), and Semler, grown just north up the coast.  Chris and I enjoyed both flights of a variety of Saddlerock whites and pinots, and the Semler cabernets.  Then we grabbed a bottle of Saddlerock Syrah and lounged under the beautiful olive trees and enjoyed some live music.  Dont forget to pack some snacks!

Countdown On!



With just a few weeks left until we depart to Italy, it's time to start preparing for the trip!  Chris and I have both been so busy with work I think we both kind of forgot we had this amazing vacation planned.  But as the weeks go by I am starting to get in serious Italy mode.  I got my books and started reading up on everything Italy.  Our destinations:  Rome, Florence(pictured above) and Pisa, and Capri, the true Italian experience according to a well traveled friend of mine.


I got inspired and decided to whip up some Italian for us!

Pork Chops with Sage (serves 2)
Adapted from Skinny Italian
2 eight oz. center cut pork loin chops, on the bone
1/2 tbsp extra virgin olive oil
1/4 tsp salt
1/2 tsp dried sage
1/4 tsp fresh ground pepper
1/2 cup of tomato sauce

Heat oil in skillet over medium heat.  Rub in salt, pepper, and sage into the pork on both sides.  Add to skillet and cook turning over once until browned.  About 5-10 minutes.  Add tomato sauce and bring to simmer.  Reduce heat, cover and simmer until pork is opaque when pierced near bone.
I served with pan grilled zucchini seasoned with salt and pepper.  Oh and some vino of course!

The Coffee Conservatory


Alright all you Angelenos... Im about to let you in on a little treasure tucked away in Culver City.  Nestled in a tiny building across from Sony Studios lies the Conservatory for Coffee, Tea, and Cocoa.  The Conservatory has been roasting their own beans and serving more than 150 selections of tea since 1995.  Yes that's right, they roast coffee beans from all over the globe right there in the café.  Can you say that about your local Starbucks?  Don't think so.
Chris turned me onto this place after going there to build my parents a lovely made to order coffee gift basket which they claim was some of the best coffee they've ever had.  And I can attest.  The Conservatory has me addicted to their vanilla latte.  The first sip puts an instant smile on my face, and that's not just the caffeine talking.  Treat yourself and visit the Conservatory for an amazing beverage!

Quinoa Cakes


Last week I found myself home after a long day, hungry, and scowering the kitchen for something tasty for dinner.  My eyes went to a blue box of mac and cheese.  Quick, easy, and delicious.  However, as I'm trying to make healthier choices lately, I searched around for a healthier alternative to whip up.  This is often a challenge of mine.  Figuring out how to combine what I have left in the house into a meal.  After taking inventory I decided on quinoa cakes!  Im a big fan of the quinoa cakes from whole foods.  But they are a but pricey, so why not try homemade?

Here's what you need:
- about 1/2 cup dry quinoa, cooked
- 1 c. shredded carrot
- 2 c. spinach
- salt and pepper to taste
- 2 tbsp flax seed (optional)
- curry powder to taste (optional, but i liked it!)
- 1 egg, or flax egg if you're going the vegan route
- 1/4 c. bread crumbs



Cook quinoa and combine in large mixing bowl with other ingredients.  Grab a handful of the mixture and form into a ball.  The egg or flax egg is what helps everything stick together.  I've found cooking the spinach before hand make the mixture a little easier to handle.
Pour a bit of olive oil into a non stick pan on medium heat.  Place ball into pan and press down with spatula to form a patty.  Cook on each side for several minutes until each side is browned.
A few of mine fell apart but they still tasted great and I felt better about having this healthy dinner in the place of box mac and cheese.
