Breakfast of Champions


Its a well known fact that oatmeal has lots of great health benefits and is an excellent choice for breakfast.  Oatmeal can lower cholesterol, boost your immune system, stabilize blood sugar, and it also lowers risk of diabetes.  Sounds like a super food to me!  I also love it because it fills me up so Im not scavenging for a mid morning snack.
Now you might think oatmeal is a boring choice.  But there are so many delicious options!  I got inspired from this tribute to oatmeal by Kath Eats Real Food.  All those pictures make you crave a big bowl of oatmeal!  For this one I used regular oats sprinkled with chia seeds, chocolates chips, peanut butter, a touch of coconut flakes and yes.... topped it with a Girl Scout Peanut Butter Patty.  Dessert for Breakfast?  Ok, the cookie might be a bit much.  But my point is, you can add great mix ins to your oatmeal to make it exciting and still enjoy all the health benefits! :)
